Vinification: White wine at a controlled temperature of 16°C. Second fermentation in the bottle according to the classic method

Disgorgement: after 60 months on the lees in the bottle
Color: Straw yellow with bright silver reflections. Fine and persistent perlage.
Nose: Intense and complex on the nose, with notes of exotic fruits, including pink ones. Mineral, it also expresses intense notes of bread crust. Flavor: Dry, warm, and smooth on the palate, refreshed by a well-balanced acidity that takes on a pink hue in the grapefruit finish. Excellent body.
Food Pairings: Harmonious and long-lasting, it is best enjoyed with a first course seasoned with butter, a sprinkling of 18-month-aged Parmigiano Reggiano DOP, and embellished with a generous helping of white truffle. It is also excellent served with Mozzarella di Bufala Campana DOP, extra virgin olive oil, lemon, and green pepper; seafood, shellfish, and semi-seared scallops with lemon. Composed and captivating, it is best enjoyed with slow, measured, and continuous sips.
